Vegetable Recipe For Kids: Creamed Spinach Gratin

It’s always a challenge getting kids to eat their vegetables. If you’re a busy mother, don’t give up! The trick is to prepare the greens in a way that will please their picky palates and combine them with foods they already love. Kids will take a shine to this tasty, velvety spinach dish. It’s also loaded with a variety of vitamins and minerals.

Ingredients (serves 4 people)

  • 450g fresh spinach
  • 1 tablespoon olive oil
  • ½ cup onion, chopped
  • ½ cup cream cheese, cubed
  • ½ teaspoon dried oregano
  • 1 teaspoon butter
  • ¼ cup grated Parmesan cheese
  • Salt and pepper

  1. Preheat oven to 180 degrees Celsius.

  2. In a large sauté pan, heat olive oil over medium heat. Add onion, sauté for about 3 minutes.

  3. Add spinach, cover and cook 2 minutes or until spinach wilts. Mix in cream cheese, oregano, and pinch of salt and pepper. Cook until cream cheese melts, about 1 minute.

  4. Butter a 1-liter casserole dish then add spinach mixture. Sprinkle with Parmesan cheese. Bake for 30 minutes or until golden brown.
