Ingredients (serves 8 people)

  • 100ml olive oil
  • 200ml balsamic vinegar
  • 500g mixed tomatoes of your choice, halved
  • 6 feta cheese wheels, roughly broken
  • 30g fresh basil, torn
  • Salt and freshly ground black pepper to taste

  1. Mix olive oil and vinegar.

  2. Place tomatoes, feta and basil in a serving dish.

  3. Pour vinegar mixture over and mix lightly.

  4. Season with salt and black pepper. Serve.
