Ingredients (serves 4 people)

  • 675g Brussels sprouts cuts in half
  • 2 tbsp (30g) butter
  • 2 tbsp (15g) white flour
  • 1 1/3 cup (325ml) milk
  • ¼ cup (22g) fresh grated Parmesan cheese
  • Pinch of salt and freshly grated nutmeg

  1. In a casserole dish, add Brussels sprouts plus 1/3 cup (75ml) water.

  2. Microwave for 5 to 8 minutes. Let sit while making sauce.

  3. In a separate glass bowl, melt butter and blend in flour and milk.

  4. Microwave until mixture comes to a full boil and thickens.

  5. Remove and add Parmesan cheese, lemon zest, salt and nutmeg to taste.

  6. Drain Brussels sprouts and pour sauce over top.
