Simple Snacks for a Party: Skittle Cookies

Ingredients (serves 6 people)

  • 240g (260ml) butter
  • 140g (160ml) castor sugar
  • 2 large egg yolks
  • 10ml vanilla essence
  • For Royal icing
  • large egg whites
  • 20ml lemon juice
  • 865ml (450g) sifted icing sugar
  • 670-770ml (350-400g) sifted icing sugar
  • 10ml glycerine
  • red food colouring

Directions

  1. Beat the butter and sugar together until light. Beat in the egg yolks and vanilla essence. Add the flour and stir until it forms a soft dough. Cover in plastic wrap and refrigerate for one hour.


  2. Divide the dough in three. Roll one piece of the dough out between two sheets of plastic wrap. Use the skittle template to cut the dough into skittle-shaped biscuits. You should get 12 to 15 biscuits out of each piece of dough.


  3. Place the shapes onto a lined baking tray and bake in a preheated oven for 10 minutes. You may need to turn the baking sheet half way through to prevent one side from browning too much. Remove from the baking tray and leave to cool on wire racks. Continue in the same way with the remaining dough.


  4. For Royal icing: Stir the egg whites, lemon juice and 865ml (450g) sifted icing sugar together in a large bowl. Gradually stir in the remaining icing sugar and stir until smooth and glossy but able to hold its shape. Stir in the glycerine and red food colouring. Cover with plastic wrap and chill until needed.


  5. Pipe an outline onto the cooled biscuits with a thin round nozzle. Leave to harden for five minutes. Mix a little hot water into the remaining royal icing until it can slowly run off a spoon. Fill the outlines of the skittles with white icing and leave to harden for at least two hours.


  6. Mix red food colouring into a little remaining royal icing and pipe two lines across the neck of each skittle. Leave to harden overnight.
