Plum, raisin and apple upside-down cake

Upside-down cakes are such a crowd-pleaser. Easy to make, yet super impressive, and with all that saucy deliciousness soaking in on itself.

Ingredients (serves 6 people)

  • 2 green apples
  • 6 ripe plums
  • 45 ml melted butter (for brushing)
  • 45 ml brown sugar
  • 125 ml raisins
  • 500 ml cake flour
  • 20 ml baking powder
  • 7 ml ground cinnamon
  • 280 ml white sugar
  • 125 ml butter, melted
  • 2 eggs, whisked
  • 190 ml milk
  • Thick cream for serving
  • An additional 225 g green apples, cored, skinned and diced

  1. Peel and core the whole apples. Cut into 1 cm-thick slices.

  2. Remove the pips from the plums and cut into slices.

  3. Brush the inside of the flan tin with melted butter. Place the tin into the freezer for 2 minutes, then brush again.

  4. Sprinkle the brown sugar over the base of the flan tin, shaking it to ensure it covers the entire base.

  5. Arrange the plums, apples and raisins on the bottom of the prepared flan tin.

  6. Sift together the cake flour, baking powder and cinnamon. Add the sugar to the dry ingredients.

  7. Beat in the melted butter, eggs and milk.

  8. Stir in the diced apple.

  9. Turn the mixture into the tin, spreading it evenly.

  10. Place the flan tin on a baking sheet and bake for 40 minutes, or until a testing skewer comes out clean. Leave to cool in the tin for about 15 minutes before turning out onto a serving platter. Serve cold or lukewarm with thick cream.
