Ingredients (serves 4 people)

  • Chicken broth
  • 2 tbsp flatleaf parsley leaves
  • 200g baby carrots, peeled and sliced
  • 200g pappardelle or tagliatelle

  1. Bring the broth to a simmer. Add the carrots and cook gently until tender. Cover and keep warm.

  2. Cook the noodles according to packet instructions and divide between four bowls. Ladle the soup into the bowls and add the parsley. Serve immediately.
