Check out this delicious Moroccan chicken, pumpkin and corn stew recipe; this is a great low fat recipe that will impress everyone.
Ingredients (serves 4 people)
- 10ml (2tsp) olive oil
- 1 (180g) large onion, diced
- 75g (¾ cup) celery, chopped
- 15ml (1tbsp) garlic, crushed
- 15ml (1tbsp) Chermoula spice
- 70g tomato paste
- 10ml (2tsp) cumin seeds
- 300g pumpkin, cubed
- 500ml (2 cups) chicken stock
- 1 (410g) can of tinned tomatoes
- 250g fresh corn kernels
- 250g baby tomatoes
- fresh coriander, to serve
Directions
Heat the olive oil in a heavy-based pot. Add onion and celery and sauté for 5 minutes.
Stir in the garlic and chicken and gently fry for a few minutes to give the chicken some colour. Add in the Chermoula spice, tomato paste, cumin seeds and pumpkin and fry for 1 minute.
Pour in the stock and tinned tomatoes and bring to a boil. Once boiling, cover and reduce to a gentle simmer for 30 minutes.
