Steamed Low Fat Vegetable Stir Fry Recipe

This is the perfect low calorie meal and at the same time most yummy food that you have ever tried; Enviedeplus recommends a delicious vegetable stir fry.

Ingredients (serves 4 people)

  • ½ pak choi (Chinese cabbage)
  • 1 broccoli
  • 1 Japanese eggplant (or normal eggplant)
  • 1 red pepper
  • 12 shiitake mushrooms
  • A knob of ginger
  • 100g bean sprouts
  • ½ red chilli pepper
  • 3 tbsp groundnut oil
  • 1 tbsp sesame oil
  • 2 tbsp mirin
  • 2 tbsp rice vinegar
  • 2 tbsp shoyu (Japanese soy sauce)
  • 1 onion
  • 1 garlic clove
  • 2 tbsp sugar

  1. Steam the broccoli for five minutes. Meanwhile, cut all the other vegetables and grate the ginger. Here's a tip: cutting the Eastern way means cutting at an angle. Use a very sharp knife to make sure you cut the eggplant, peppers and chilli this way.

  2. Heat the groundnut and sesame oil in a wok. Stir-fry all the vegetables for about three minutes until glazed, then add the ginger and garlic. Stir for a minute or two before adding the rice vinegar and mirin as they will evaporate quickest. Stir again, then immediately add the sugar and finally the soy sauce. This will start to caramelise the veggies. Stir-fry for another two or three minutes, taking care to continuously stir and toss the veggies around in the wok.

  3. And there you have it: in less than 15 minutes, an authentic Japanese stir-fry. And at just 400 calories per portion, you will probably burn more calories cooking the stir-fry than you will eating it!
