Healthy Detox Recipe: Kale Salad with Tomatoes and Dried Cranberries

Ingredients (serves 4 people)

  • 1 bunch kale, stalks removed, leaves chopped
  • Half lemon, juiced
  • Coarse salt
  • ½ cut tomatoes, chopped
  • ¼cup dried cranberries
  • For dressing: ¼cup extra-virgin olive oil, plus extra for drizzling 1/8 cup balsamic vinegar ½ teaspoonDijon mustard Freshly ground black pepper

  1. In large bowl, add the kale, lemon, a drizzle of oil and a pinch of salt. With clean hands, massage everything together until kale starts to soften andwilt, about 3 to 5 minutes. Set asidewhile you make the dressing.

  2. For dressing, whisk together olive oil, vinegar, mustard and a little pepper.

  3. Combine tomatoes and cranberries with kale. Pour dressing over vegetables. Toss and serve.
