Easy Asian Salad: Crunch Slaw

You overindulged during the holidays and now you’re starting the New Year not feeling your best. You want to clean out your system but you have no idea where to start. Try this crunchy, hearty salad with Asian flavors is a tasty alternative. Eat at home or as a healthy packed lunch.


Ingredients (serves 4 people)

  • 2 cups bean sprouts
  • 1 cup green cabbage, shredded
  • 1 red pepper, thinly sliced into strips
  • 1 cup sugar snap peas, halved
  • 2 green onions, chopped
  • 2. For dressing:
  • 1 inch ginger
  • 1 cup olive oil
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons soy sauce
  • 4 tablespoons fresh lemon juice
  • 1 garlic clove

Directions

  1. Combine dressing ingredients in blender and process until smooth.


  2. Mix vegetables in a large bowl.


  3. Pour half of the dressing over the salad and mix well. If too dry, add more dressing. You want well-coated vegetables, not a soggy mixture.


  4. Plate and dig in!
