Freshly Chopped Italian Salad Recipe

You overindulged during the holidays and now you’re starting the New Year not feeling your best. You want to clean out your system but you have no idea where to start. Try this Italian salad: a burst of fresh lettuces, peppers and tomatoes and a healthy addition to any meal. This salad is not meant to be overly dressed, so the taste of the vegetables can come alive.

Ingredients (serves 4 people)

  • 1 head romaine lettuce, chopped
  • 1 cup arugula
  • 1 yellow pepper, chopped
  • 1 red pepper, chopped
  • 2 ripe Roma tomatoes, chopped
  • 1 zucchini, chopped
  • For dressing:
  • ¼ cup fresh basil, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon garlic clove, minced
  • Salt and freshly ground pepper to taste

  1. Mix vegetables in a large bowl. Whisk together dressing ingredients.
