Chocolate Truffles Recipe

Anyone can take a trip to a candy store or bakery to buy confections for family and sweethearts on Valentine’s Day. But if you’re a mother who prefers making something homemade for that extra personal touch, try chocolate truffles: just let chocolate ganache harden in the refrigerator to make these divine delights. Coffee lends added depth to the chocolate flavour.

Ingredients (serves 6 people)

  • 340g semi-sweet chocolate morsels or chopped chocolate
  • 4 tablespoons unsalted butter, softened
  • ½ cup heavy cream
  • 1 tablespoon coffee
  • 1 tablespoon dark rum (optional)
  • Cocoa powder, shredded coconut, chopped nuts (optional)

  1. Melt chocolate and butter in a double broiler. Stir until melted and smooth.

  2. Stir in coffee and let the chocolate cool slightly. Dark rum can be added if desired for extra flavour.

  3. Add cream to another saucepan and bring to a simmer. Remove from heat. Slowly add to chocolate mixture, stirring until thick and shiny.

  4. Place mixture in freezer for about 30 minutes or until set. Consistency should be thick like fudge. Using a small spoon or melon baller, shape mixture into balls. Place on a sheet pan lined with parchment paper and freeze for another 15 minutes.

  5. Leave truffles plain or dust with cocoa powder, roll in shredded coconut or chopped nuts for variation. Store in a container and keep in the refrigerator.
