Ingredients (serves 6 people)

  • 400g unsweetened shredded coconut
  • 400g sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 large egg whites, at room temperature
  • 170g semi-sweet chocolate morsels or chopped

  1. Preheat oven to 160 degrees Celsius.


  2. Combine coconut, condensed milk, and vanilla in a large bowl.


  3. With an electric mixer, beat egg whites on high until they form firm peaks. Gently fold into coconut mixture.


  4. Drop mixture by rounded teaspoon onto a sheet pan lined with parchment paper. Bake for about 25 minutes or until golden brown. Let cool.


  5. Melt chocolate in microwave-safe glass bowl for 30 seconds at a time until melted and smooth. Dip macaroons into chocolate and let harden for at least 1 hour.
