Winter Squash Recipe with Walnuts and Cranberries

Fantastic for fast weeknight meal preparation, cooking with a steamer basket, steaming rack or foil packet also ensures the dish is super healthy and tasty. Add some crunch and tart flavour to the homey comfort of steamed squash. You can save time by buying peeled and cubed winter squash.

Ingredients (serves 4 people)

  • 1 medium winter squash such as butternut, (about. 700g), peeled and cut into 4- cm cubes
  • 110g walnuts
  • 110g dried cranberries
  • 2 tablespoons olive oil
  • Salt and pepper

  1. Steam winter squash until tender, about 15 minutes.

  2. While squash is steaming, toast walnuts in 160 degrees Celsius oven until golden, about 8 minutes. Remove and cool.

  3. Toss squash in serving bowl with toasted walnuts, dried cranberries, olive oil and salt and pepper to taste.
