Ingredients (serves 4 people)

  • 1½ cups hard wheat berries
  • ¾ cup walnuts, chopped
  • 2 stalks celery, chopped
  • 1 apple, cored, chopped
  • 1 cup grapes, halved
  • 1/2 cup dried cherries
  • 1 scallion, chopped
  • ½ cup parsley leaves, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and freshly ground black pepper

Directions

  1. In a saucepan, add wheat berries and enough water to cover them by 4 centimetres.


  2. Bring to a boil, reduce to simmer and cook uncovered for 1 hour, or until tender. Drain and let cool.


  3. Toast walnuts in a medium dry skillet for about 3 minutes. Stir to prevent burning.


  4. Combine wheat berries, walnuts, celery, apple, grapes, dried cherries, scallions, parsley, olive oil and lemon juice. Season with salt and pepper to taste.
