Antioxidant-rich Watermelon Gazpacho Recipe

Ingredients (serves 4 people)

  • 4 cups, watermelon, seeded, rough chunks, divided
  • 1 cucumber, peeled, rough chunks
  • 1 red bell pepper, quartered
  • ½ onion, rough chunks
  • ¼ jalapeno pepper, seeded
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon fresh mint
  • 1 tablespoon honey
  • A few whole mint leaves

  1. Set half a cup of watermelon aside. In the food processor, combine rest of watermelon, cucumber, red bell pepper, onion, jalapeno pepper, lemon juice, olive oil, mint, and honey, and process for about 30 seconds. It’s okay to leave some chunks for texture.

  2. Chill mixture in refrigerator for 1 hour.

  3. Serve in bowls and garnish with bits of remaining watermelon and a few mint leaves.
