Ingredients (serves 4 people)

  • 4 ripe pears, peeled
  • ½ bottle red wine
  • 1 orange, juiced and zested
  • 1 lemon, juiced
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • 1 cinnamon stick
  • 4 cloves
  • ½ cup pomegranate seeds

  1. In a saucepan, combine wine, orange zest and juice, lemon juice, sugar, vanilla, cinnamon, and cloves. Bring to a simmer.

  2. Add pears and bring to a boil. Then reduce heat and simmer uncovered. Turn pears to get even colouring.

  3. Cook pears until they can be pierced with a fork, about 25 to 30 minutes.

  4. Transfer pears to individual plates.

  5. Strain liquid and return to stove. Simmer until reduced to a thick syrup. Spoon over pears and garnish with pomegranate seeds.
