Try Healthy Recipe of Poached Salmon with Spinach

Almost everyone is familiar with the disease-fighting properties of antioxidants, those beneficial substances that protect cells from damage caused by unstable molecules. To incorporate them into your diet without relying on supplements, try this recipe. Packed with antioxidants and omega-3s, salmon has truly earned its title as the “king of fish.” And vitamin-rich spinach pumps up the nutritional volume.

Ingredients (serves 4 people)

  • 1½ cups water
  • ½ cup white wine
  • 1 bay leaf
  • 1 green onion, chopped roughly
  • 4 salmon fillets, about 110 – 170g each
  • 450g spinach, cooked and drained
  • Salt and pepper
  • ½ lemon

  1. In a large shallow pan, combine water, wine, bay leaf and green onion. Bring to a boil.

  2. Sprinkle each salmon fillet with pinch of salt and pepper. Add to poaching liquid, which should not cover more than half of the fish. Add more water if needed. Return to a boil. Then reduce heat, cover and simmer 5 to 10 minutes, until fish flakes easily with a fork.

  3. Remove salmon and blot dry with paper towel.

  4. Toss spinach with pinch of salt and pepper. Divide among 4 plates. Arrange fish on top, squirt each with a bit of lemon, and serve warm or cold.
