Italian Cake: Basic Polenta Recipe While On Travel

Ingredients (serves 6 people)

  • 8 ounces (2 sticks) unsalted butter
  • 1-1/4 cups sugar
  • 3 eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1-1/4 cups fine cornmeal
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 375 degrees. Generously grease a 9x9inch baking pan.


  2. With an electric mixer, beat together the butter and sugar until light and fluffy. Add eggs, one at a time, just until combined.


  3. Stir in buttermilk and vanilla.


  4. Whisk together flour, cornmeal, baking powder and salt. Fold into batter gently.


  5. Pour batter into prepared pan and bake until tester comes out clean, 30-35 minutes.


  6. Cool on rack.
