Tangy Sandwich Recipe with Tuna Fish

Ingredients (serves 4 people)

  • 2, 6-oz cans tuna
  • 1 celery stock, minced
  • 1 scallion, minced
  • 1 tablespoon parsley, chopped
  • salt and pepper to taste
  • 2 teaspoons apricot or peach jam
  • 1 tablespoon mayonnaise
  • 8 slices whole wheat or white sandwich bread
  • 1 ripe tomato, sliced
  • 4 lettuce leaves

  1. Mix tuna, celery, scallion, parsley, salt and pepper, jam, and mayonnaise in bowl until smooth.

  2. Divide between four slices of bread. Add tomato slices and lettuce leaf and top with remaining bread.

  3. Cut into four squares and pack into individual sandwich container boxes.
