Vietnamese Sandwich - Bahn Mi

Ingredients (serves 4 people)

  • 1/4 pound pork paté
  • 8 slices ham
  • 2 cooked chicken breasts, sliced
  • 2 tablespoons mayonnaise
  • 16 cilantro sprigs
  • 1 large carrot, grated
  • 2-inch piece of daikon radish, peeled and shredded
  • 1 cucumber, thinly sliced
  • 1/2 cup rice vinegar
  • 1 jalapeño pepper, seeded and sliced (optional)
  • 2 (20-inch) baguettes cut into 4 equal parts (without ends)

  1. Place carrots, daikon and cucumbers in a bowl and soak in rice vinegar for 15 minutes; drain.

  2. Slice a lightly toasted baguette lengthwise (not all the way through). Spread a layer of pâté on the bottom and a layer of mayo on the top.

  3. Layer slices of ham and chicken onto the bread.

  4. Top with pickled vegetables, cilantro and sliced jalapeños.
