Ingredients (serves 4 people)

  • 1/2 cup extra-virgin olive oil
  • 1-1/2 cup fresh basil
  • 8 ounces feta, crumbled
  • 1 cucumber, peeled and sliced
  • 1 tomato, sliced
  • 3/4 cup Kalamata olives, sliced
  • 4 large leaves of lettuce
  • 1 lemon, cut into 4 wedges

  1. Puree olive oil, 1 cup of basil and 1/4 teaspoon salt in a blender.

  2. Divide the feta, olives and remaining 1/2 cup of basil.

  3. Salt and pepper tomatoes and cucumbers. Drizzle with oil and toss in a bowl.

  4. Spread hummus inside the pita and stuff with above ingredients. Squeeze on lemon.
