Make Chocolate Chip Cookies with Peanut Butter

Mother's Day is here, so its time to make some great memories in the kitchen! Give mom a break this year by whipping up these oh-so-easy cookie recipes.

Ingredients (serves 8 people)

  • 1/2 cup (125 mL) simple syrup
  • 1/3 cup (75 mL) cocoa powder
  • 1⁄4 cup (50 mL) milk
  • 1⁄4 cup (50 mL) coconut oil
  • 1⁄2 cup (125 mL) peanut butter
  • 3 cups (750 mL) corn flakes
  • 1⁄4 cup (50 mL) semisweet mini chocolate chips
  • 1 teaspoon (5 mL) vanilla extract
  • 1 teaspoon (5 mL) of kosher salt

  1. In a medium saucepan, mix together syrup, cocoa powder, milk and coconut oil. Place the pot over medium heat and bring the mixture to a slight boil, continue stirring for about 1 minute until the ingredients are combined. Remove the saucepan from the heat and set it aside

  2. In a mixing bowl, combine the peanut butter, corn flakes, chocolate chips, vanilla and salt. Add the melted chocolate sauce from the saucepan to the bowl, and stir all the ingredients together until they are well combined

  3. Using a small scoop, drop scoops of cookie mix on a parchment-lined baking sheet. Shape the cookie mix scoops into balls to form rounded cookies

  4. To store the cookies, keep them in an airtight container in the refrigerator
