Rainbow Cupcakes Recipe: Bake Colorful Cakes Today

Ingredients (serves 10 people)

  • 1 (18 ounce) (515 gram) box yellow cake mix
  • 4 eggs
  • 1/2 cup (125 mL) vegetable oil
  • 1/2 cup (125 mL) water
  • 8 ounces (225 grams) sour cream
  • 1 small vanilla instant pudding mix
  • Food coloring (red, blue, yellow, green and purple)

  1. Preheat oven to 350 F (180 C)

  2. In a stand mixer, beat the cake mix, eggs, oil, water, sour cream and pudding on medium until well combined

  3. Divide batter evenly between 5 bowls

  4. Drop 5 different colors of food coloring into each cake batter bowl until you reach your desired colors, and stir well

  5. Spoon each color into paper-lined cupcake tins until all are filled

  6. Bake for 22-25 minutes or until cooked through. Remove and let cool completely
