Peppermint Cupcake Recipe

Ingredients (serves 10 people)

  • 12 candy canes
  • 1 (18 ounce) (515 gram) box of devil's food cake mix
  • 1 1/3 (325 mL) cups water
  • 1/2 cup (125 mL) vegetable oil
  • 3 large eggs
  • 1/4 teaspoon (1 mL) peppermint extract
  • 16 ounces (455 grams) vanilla frosting

  1. Place the candy canes in a food processor and grind to a fine powder

  2. Line two muffin pans and preheat oven to 350 F (180 C)

  3. Blend cake mix, water, oil, eggs and peppermint extract in a mixing bowl at low speed for 30 seconds, and then medium speed for 2 minutes

  4. Fold in 1/4 cup of the candy cane powder, reserving the rest. Divide batter among muffin pans and bake for 20 minutes. Remove and cool completely

  5. While cooling, stir remaining candy cane powder into the vanilla frosting. Frost cooled cupcakes and sprinkle any remaining powder on top
