These scrumptious little cakes are so easy to make – simply beat the ingredients together. Decorate them with mini meringues for a sophisticated touch.

Ingredients (serves 8 people)

1. Cakes

500 ml (2 c) cake flour

80 ml (¹⁄3 c) cocoa powder

250 ml (1 c) ground almonds

10 ml (2 t) baking powder

375 ml (1½ c) brown sugar

200 g butter, melted

3 eggs

250 ml (1 c) butter

2. Ganache

150 g dark chocolate

125 ml (½ c) creamor plain yoghurt

3. To Complete

24-30 mini meringues

Icing sugar (optional)

Directions

1. Preheat the oven to 180 °C. Grease 8 ramekins and dust with flour. Line a baking sheet with baking paper, grease and dust with flour.

2. In a large mixing bowl beat together the ingredients untilwell blended. Turn the mixture into the ramekins, fill themthree-quarters of theway. Bake for 45 minutes or until a skewer inserted in the middle comes out clean. Turn out onto awire rack to cool completely. Reduce the oven temperature to 100 °C.

3. Melt the chocolate and stir in the creamor yoghurt. Cool until the mixture has a spreadable consistency.

4. To complete Put the cakes on a serving platter and cover eachwith ganache.Arrange the meringues on top and set aside until the ganache has set. Dust with icing sugar (if using).
