Tomato and feta salad
Just like a symphony cannot consist solely of high notes, every menu needs a few simple, clean and fast recipes. Let this be one.
Ingredients (serves 8 people)
- 100ml olive oil
- 200ml balsamic vinegar
- 500g mixed tomatoes of your choice, halved
- 6 feta cheese wheels, roughly broken
- 30g fresh basil, torn
- Salt and freshly ground black pepper to taste
Directions
- Mix olive oil and vinegar.
- Place tomatoes, feta and basil in a serving dish.
- Pour vinegar mixture over and mix lightly.
- Season with salt and black pepper. Serve.
