Tips for healthier, yet delicious pancakes

Pancakes are your favourite treat? Toss the guilt by making them lighter and healthier, yet still delicious, thanks to these tips.

Batter matters
Dry ingredients
* 1 ½ cups (180g) whole wheat flour, instead of all-purpose flour (you may have to use more buttermilk as whole wheat tends to be drier). Other options are buckwheat and/or whole rice flour, or even cornflour (the ratio, if you want to combine buckwheat and rice, is ¾ buckwheat to ¼ of rice)
* 1 teaspoon (4g) baking powder
* ½ (2g) teaspoon baking soda
* 1 teaspoon salt

Wet Ingredients
* 1 ½ cups (360ml) low-fat (skimmed) milk or even plantbased milks such as rice milk instead of buttermilk
* 3 tablespoons (45g) sunflower oil or margarine instead of butter
* 2 eggs
* ½ teaspoon vanilla extract

Make it even lighter by removing the sugar, especially if you're using maple syrup.

A light touch
Whisk the dry ingredients together in a large bowl.
Separate the egg yolks and whites.
In another bowl, combine the wet ingredients, save for the egg whites.
Gently mix the wet ingredients into the dry ingredients, quickly, only to moisten the dry ingredients.
Beat and add the egg whites, add and mix, taking care not to over work the dough.
Cook in a hot pan and serve immediately.

Smart finish
Mapple syrup and jam are great but there are other options to consider. Top pancakes with creamy yogurt and fresh fruit or a homemade sugar-free jam. Or smother your pancakes in melted dark and low-fat whipped cream.
