8. Once the chicken breast meat has been thoroughly cooked, set the heat low, add
about 25 basil leaves, and stir-fry. Once the leaves have become soft, turn off the heat,
and complete the meal with the residual heat. If the raw basil leaves are stir-fried too
much, they will blacken, so it is okay to complete the meal with the residual heat by
turning off the heat and covering the top of the frying pan with its lid.

9. In the environment of high temperatures and high humidity that is Thailand, families
hope for healthy bodies that can endure the heat, and that very thought is strongly
present in the cooking of Thai mothers.

10. It is said that the source of the ability of those living in Thailand to overcome the heat
lies in the spicy and varied flavors represented by Tom Yum Goong and the sweet and
sour flavors provided by the rich varieties of fruits such as durians, mangos, bananas,
watermelons, and pineapples found in home cuisine.

11. Do you know about a condiment called "chili paste in oil" that is essential to that home
cuisine? It is made by stir-frying onions, dried prawns, garlic, and chili peppers, mixing
salt and sugar, and then converting it into a paste.

12. It is said that the flavor of Tom Yum Goong largely depends on the quality of this very
condiment. With its appetite-stimulating effect and the fact that any ingredient goes
well with it, it's a mother's greatest ally in helping with the cooking when your family
has lost the battle against heat along with their appetites.
