Spice Route: Soothing tea
Rooibos (Red tea) imparts a distinctive flavour when added to a variety of dishes
The leaves of Aspalathus linearis are used to make rooibos (Red tea); it is not actually a proper tea but rather a herbal infusion. The beautiful plants with their bright yellow flowers take up to three years before they are mature enough to be harvested. Only the young shoots are picked and then dried/fermented in a similar way to that of Ceylon tea.
Rooibos chicken kebabs

Total time: 2 hours 10 minutes
- 12 deboned chicken thighs
- 100 ml honey
- 20 ml lemon juice
- 10 ml soy sauce
- 5 ml dried chilli flakes
- 10 ml rooibos tea
- 5 ml lime zest
- Lime juice
- Cut the thighs into bite-sized pieces. Thread the pieces onto cocktail kebab sticks.
- Mix the honey, lemon juice, soy sauce, chilli flakes, rooibos tea and lime zest together.
- Pour the marinade over the chicken. Place it in the refrigerator and allow it to marinate for a couple of hours.
- Build a fire and when the coals are ready, grill the kebabs on both sides until golden.
- Serve with a sprinkle of lime juice.
