Onion Rings 2 Ways

Learn to make baked and fried onion rings at home, plus 4 tasty dipping sauces.

Fried Onion Rings Recipe
Serves: 2-4

You’ll need: A kitchen thermometer

300 millilitres (1 1/4 cup) flour (60 millilitres set aside for dredging) 
60 millilitres (1/4 cup) cornstarch 
5 millilitres (1 teaspoon) baking powder
1 1/2 millilitres (1/4 teaspoon) baking soda 
2 1/2 millilitres (1/2 teaspoon) salt 
240 millilitres (1 cup) milk 
Peanut, vegetable or canola oil 
1 large onion, cut into 3/4-centimetre (1/4-inch) rings


  1. Mix flour, corn starch, baking powder, baking soda, salt and milk in bowl, set aside
  2. Heat oil in a large heavy-bottom pot or cast iron pan until thermometer registers 190 C (375 F)*
  3. Place onions and dredging flour into a large zip-top bag. Shake to cover rings
  4. Remove rings one at a time and dip in batter
  5. Using tongs, remove and drop 3-4 at a time into hot oil. Cook for 45 seconds, flip and cook until golden brown
  6. Remove and drain on paper towels

*Tip: If you don’t have a thermometer, drip some batter into the oil — if it sizzles and floats, you’re good to go.

Baked Onion Rings Recipe
Serves: 2-4

Cook time: 15 minutes

1 large onion, cut into 3/4-centimetre (1/4-inch) rings 
590 millilitres (2 1/2 cups) low-fat buttermilk 
120 millilitres (1/2 cup) breadcrumbs 
120 millilitres (1/2 cup) cracker crumbs


  1. Place onion slices in shallow baking dish. Cover with buttermilk and soak for 1 hour
  2. Preheat oven to 230 C (450 F). Line baking sheet with parchment paper or cooking spray
  3. Combine breadcrumbs and cracker crumbs in large dish*
  4. Lift rings out of buttermilk individually and remove excess liquid. Coat well in crumb mixturePlace breaded rings on baking sheet and coat lightly with cooking spray. Bake 12-15 minutes until golden brown

*Tip: Substitute seasoned ground crackers with potato chips, pretzels, corn flake cereal, crisp rice cereal or croutons for a extra crunchy play on breadcrumbs.

  • Seasoned Fried Onion Rings: Combine 5 millilitres (1 teaspoon) salt, 2 1/2 millilitres (1/2 teaspoon) garlic powder and 2 1/2 millilitres (1/2 teaspoon) ground pepper and add to the dredging flour before coating the slices.
  • Spicy Baked Onion Rings: Add 75 millilitres (4 tablespoons) of hot sauce or 2 1/2 millilitres (1/2 teaspoon) cayenne pepper to the buttermilk before soaking.
  • Barbecue Baked Onion Rings: Mix 30 millilitres (2 tablespoons barbecue sauce, 15 millilitres (1 tablespoon) hot sauce, salt and pepper to taste. Coat onion slices in mixture before soaking in buttermilk.

4 Dipping Sauces
For each recipe, mix ingredients in a bowl and let flavours meld for an hour before serving.

Zesty Onion Ring Sauce
240 millilitres (1 cup) mayonnaise 
45 millilitres (3 tablespoons) chilli sauce 
15 millilitres (1 teaspoon) chili powder 
1/2 millilitre (1/8 teaspoon) cayenne pepper

Cajun Sauce
120 millilitres (1/2 cup) mayonnaise 
15 millilitres (2 tablespoons) ketchup 
10 millilitres (2 teaspoons) horseradish 
2 1/2 millilitres (1/2 teaspoon) paprika 
2 1/2 millilitres (1/2 teaspoon) black pepper 
2 1/2 millilitres (1/2 teaspoon) garlic powder 
2 1/2 millilitres (1/2 teaspoon) salt 
1 1/4 millilitres (1/4 teaspoon) cayenne pepper

Ranch Sauce
50 millilitres (1/4 cup) Greek yogurt 
50 millilitres (1/4 cup) mayonnaise 
1 garlic clove, minced 
Pinch salt 
Pinch pepper 
5 millilitres (1 teaspoon) lemon juice 
5 millilitres (1 teaspoon) dill, minced 
5 millilitres (1 teaspoon) chives, minced 
15 millilitres (1 tablespoon) parsley, minced 
45 millilitres (3 tablespoons) buttermilk

Barbecue Sour Cream 
125 millilitres (1/2 cup) sour cream 
45 millilitres (3 tablespoons) buttermilk 
30 millilitres (2 tablespoons) barbecue sauce 
5 millilitres (1 teaspoon) hot sauce 
2 pinches salt 30 millilitres (2 tablespoons) fresh chives, minced
