1. Brownies

Quick Brownie at Rewardme

15 minutes


Oven temperature:

180°C



  • 135m (125g) butter
  • 140m (45g) cocoa powder
  • 2 large eggs
  • 230ml (200g) castor sugar
  • 275ml (150g) self-raising flour
  • 60g chopped dark chocolate
  1. Melt the butter. Remove from the heat and stir in the cocoa.
  2. Beat the eggs until light, add the sugar and beat well. Stir in the cocoa mixture. Sift in the flour and fold in, along with the chocolate.
  3. Pour into a greased and lined 20cm square tin. Bake in a pre-
heated oven for 25 minutes or until
cooked through but still moist.
  4. Cool and cut into squares. Dust with icing extra cocoa powder.

2. Basic Cupcakes

Makes:

Baking time:

12-15 minutes


Oven temperature:

200°C



  • 135ml (125g) soft butter or baking margarine
  • 195ml (170g) castor sugar
  • 2 large eggs
  • 5ml vanilla essence
  • 510ml (280g) self-raising flour
  • 200ml milk
Basic Cupcakes at Rewardme
  1. Beat the butter and the castor sugar together until light. Add
 the eggs, one at a time, beating 
well after each addition. Add
 the vanilla essence and beat the
 mixture well.
  2. Fold in the flour alternately with the milk until well combined.
  3. Line a cupcake or muffin tray with paper cases. Spoon the
 mixture into the cases and bake 
in a preheated oven for 12 to 
15 minutes, or until golden and
 cooked through. Leave to cool on 
a baking rack.

3. Vanilla Biscuits

Makes:

Preparation time:

30 minutes, 
plus refrigeration time


Baking time:

10-12 minutes


Oven temperature:

170°C



  • 130ml (120g) butter

  • 80ml (70g) castor sugar
  • 1 large egg yolk

  • 5ml vanilla essence

  • 330ml (180g) cake flour
  1. Beat the butter and sugar together until light. Beat in the
egg yolk and vanilla essence. Add
the flour and stir it in until it forms
a soft dough. Cover in plastic 
wrap and refrigerate for one hour.
  2. Roll the dough out between two sheets of plastic wrap. Cut shapes
out using cookie cutters. Place the shapes onto a greased baking tray
and bake in a preheated oven for 
10 to 12 minutes. Remove from 
the baking tray and leave to cool
 on wire racks.

4. Sponge Cake

Makes:

1 x 20cm cake


Preparation time:

20 minutes

Baking time:

30 minutes


Oven temperature:

160°C



  • 5 large eggs, separated
  • 195ml (160g) castor sugar
  • 12,5ml lemon juice
  • 220ml (120g) cake flour
  • pinch of salt
Sponge Cake recipe at Rewardme
  1. Beat the egg whites until stiff, but don’t over beat. Beat in 115ml
(100g) of the castor sugar, a little 
at a time. Add the lemon juice. Set
 the mixture aside.
  2. In a separate bowl, beat the egg yolks until pale (you don’t need
to clean the beaters first). Add the
remaining sugar and beat until
thick and creamy.
  3. Fold the two mixtures together very gently.
  4. Sift a layer of the flour and a pinch of salt over the egg mixture. Fold
in gently. Repeat with another
layer of flour and fold in again.
Repeat until the flour is folded in.
  5. Pour into two 20cm pans lined with baking paper. Tap gently and
then bake in a preheated oven
for 30 minutes or until the cake
begins to shrink away from the
sides. Remove from the oven and set aside to cool on a wire rack.
