Cooking Tips: Learn How to Make Moroccan Style Chicken @ Reward Me

Moroccan chicken

Tajine is a Middle-Eastern way of making stews, named after the cone-shaped clay vessel in which the fragrant brew is slow cooked. Bake your Sunday chicken the same way, using Moroccan spices and a normal pot.

Ingredients (serves 6 people)

  1. 3 whole star anise
  2. 5 cardamom pods
  3. 10 ml cumin
  4. 10 ml cinnamon
  5. 5 ml ginger
  6. 10 ml paprika
  7. 100 ml olive oil
  8. 1 large chicken (about 600g)
  9. 1 onion, chopped
  10. .4 garlic cloves
  11. Salt and freshly ground black pepper
  12. 1 x 400g can chickpeas
  13. 1 x 400g can tomatoes of your choice
  14. 500 ml chicken stock
  15. A hand full of coriander, chopped
  16. 100 g almonds


1. Mix spices and 60ml olive oil. Smear over chicken and place in the fridge for about 2 hours.

2. Heat oven to 160ºC. Heat the remaining olive oil in a medium-sized pot. Place chicken in warm pot and fry till brown. Add onion and garlic and fry for another 5 minutes. Season well with salt and black pepper.

3. Add chickpeas, tomatoes and stock. Cover pot with lid and bring to the boil. Place in warm oven and bake for 1.5 hours. Heighten heat to 200º.

4. Remove lid and roast uncovered for another 30 minutes. Remove from the oven and sprinkle coriander and almonds over. Serve with couscous.

5. Hint: You can also use lamb shanks, oxtail or a whole deboned leg of lamb instead of chicken. If using chicken, opt for an organic bird if possible.
