A few French classics for every amateur to try at home.


Ratatouille

Ingredients:

  • 60ml olive oil
  • 2 onions, diced
  • 2 cloves garlic, crushed
  • 2 aubergines, diced
  • 3 courgettes, diced
  • 2 red peppers, diced
  • 1 x 400g can whole peeled tomatoes
  • Handful fresh basil, roughly chopped
  • Salt and pepper, to taste

Method:

  1. Heat the oil in a large pan and gently fry the onions and garlic over a low heat for about 10 minutes until softened.
  2. Add the aubergines, courgettes and peppers and fry for a further 10 minutes.
  3. Add the canned tomatoes and basil and season.
  4. Stir once really well, then cover the pan with a lid and simmer very gently for 10-15 minutes.
  5. Adjust seasoning and serve with crusty bread to mop up the juices.

Tarragon Chicken
Serves: 2

Ingredients:

  • 15ml butter
  • 15ml olive oil
  • 2 chicken breast fillets
  • 1 shallot, finely sliced
  • 1 clove garlic, crushed
  • 60ml fresh tarragon, chopped, plus extra to serve
  • 45ml crème fraiche
  • New potatoes, to serve

Method:

  1. Heat the butter and oil in a pan and fry the chicken on both sides until golden.
  2. Cover the pan, reduce the heat and cook for 8-10 minutes.
  3. Push the chicken aside, add the shallot and garlic and cook for 1-2 minutes.
  4. Add the tarragon and crème fraiche and cook for 1 minute.
  5. Season and serve with new potatoes, garnished with extra tarragon.

Tarte fine aux pommes
Makes: 4 - 6

France food Tarte fine aux pommes

Ingredients:

  • 400g roll ready-made puff pastry, defrosted
  • 3 apples (Pink ladies or Granny Smiths work well)
  • Juice of 1 lemon
  • 80ml butter, melted
  • 5ml ground cinnamon
  • 30ml brown sugar

Method:

  1. Roll out the dough and cut it into 4-6 individual circles.
  2. Place the circles on a greased baking tray without touching.
  3. Peel and core the apples, then cut them into very thin slices - the thinner the better. Toss the apple slices in the lemon juice to stop them going brown.
  4. Arrange the apple slices on top of the circles of dough in a flower pattern, or concentrically overlapping.
  5. Drizzle the butter over the apples. Mix together the cinnamon and sugar and sprinkle this evenly over the apples.
  6. Bake in a preheated oven at 200º C for 12 minutes. Do not open the oven door while the tarts are baking.
