Blueberry jam
Nothing beats this on a classic, baked vanilla cheesecake.

  • 500g blueberries
  • Finely grated rind of 1 lemon
  • Juice of 2 lemons
  • 500g sugar


  1. Place the berries in a large saucepan and press lightly with a potato masher so that some of the skins burst open.
  2. Add the lemon rind and juice and bring to the boil. Cover and boil for five minutes.
  3. Remove from the heat, add the sugar and stir until all the sugar has dissolved.
  4. Bring to the boil and boil fast, while stirring every so often, until the jam starts to congeal.
  5. Spoon into a sterilized flask and seal airtight. Makes about 500ml jam.

Tip Replace the blueberries in the recipe with the same amount of mixed berries or black cherries without pips.

Make jams Tomato jam


  • 1.2kg ripe tomatoes
  • Boiling water
  • Juice of 1 lemon
  • 4x250ml sugar
  • 6cm piece of fresh ginger, peeled in sliced into pieces of 1cm
  • 2ml coarse salt


  1. Cover the tomatoes with boiling water and leave to stand for three minutes.
  2. Rinse with cold water and peel the skins off.
  3. Chop finely. Place the chopped tomatoes and the sugar in a heavy based pot and add the lemon juice and sugar.
  4. Stir until the sugar has dissolved. Add the ginger and salt and bring to the boil.
  5. Boil fast, whilst stirring regularly, until the jam starts to congeal.
  6. Spoon into sterilized flasks and seal airtight. Makes 800ml jam.
