How to make quick veggie tacos

Once upon a time vegetarian recipes were considered a bit weird but today, tasty vegetarian food is as mainstream as pop music. If you are looking for a dish that's quick and easy to make, and that will impress kids both big and small, try these vegetable and cheese tacos. Make them as mild or spicy as you want – there will always be maximum taste.

INGRÉDIENTS (pour 4 gourmands)

  1. Olive oil
  2. 1 large or 2 small courgettes or summer squash
  3. ½ medium onion
  4. 1 chopped garlic clove
  5. 1 large fresh green mild chilli, deseeded and chopped
  6. ½ fresh jalapeño chilli, deseeded and chopped
  7. Salt
  8. A pinch of ground cumin
  9. A pinch of ground oregano
  10. 1 small to medium tomato, chopped
  11. 4 good-quality corn tortillas
  12. 4 slices of cheddar cheese
  13. ¼ cup of crumbled Mexican cotija cheese (can substitute with feta)
  14. Some chopped coriander

  1. Dice all of the vegetables. Heat a tablespoon of oil or two in a large frying pan on medium-high heat. Add the courgettes, onions, garlic and chilies to the pan. Sprinkle with salt and cumin. Coat the vegetables with the oil in the pan and turn occasionally until everything is lightly browned. Stir in the chopped tomatoes and oregano, then lower the heat. Gently cook the mixture for a few minutes while you prepare the tortillas.

  3. Put a slice of cheese on the tortillas and heat them on a flat pan coated with a drop of
    oil for a few minutes. Alternatively, you can heat the cheese-covered tortillas in the oven
    for a few minutes at 180°C until the cheese is melted – just make sure the tortillas
    stay soft. Arrange the tortillas on a plate, spoon in some of the veggie filling and voila!
    Veggie and cheese tacos.
