Homemade chocolate hazelnut spread

Presented in a pretty little pot with a ribbon, this delicious spread makes for a wonderful gift. If you can bear to part with it! Choose your favourite chocolate – dark or milk – and remember that the better the quality of the chocolate, the tastier your spread will be.


Ingredients (serves 2 people)

  1. 100g chocolate
  2. 150g hazelnuts
  3. 125ml icing sugar, sifted
  4. 62.5ml cocoa powder, sifted
  5. 2 teaspoons vegetable oil

Directions

1. Roast the hazelnuts at 180°C in a preheated oven, keeping a watchful eye on them. When they start to brown, remove from the oven and rub in a clean tea towel to remove the skins.

2. Meanwhile, melt your chocolate using a double boiler or a bowl on top of a pot of boiling water on low heat. The chocolate must melt slowly to prevent lumps.

3. While the chocolate is melting, pop your hazelnuts into a food processor – not a blender – and grind until the nuts become a bit buttery but are still fairly chunky.

4. Add the dry ingredients, then the melted chocolate and blend for about 15 minutes until smooth – a teaspoon or two of oil will ease the process.

5. When you’re satisfied with the smoothness, let the mixture set for about an hour (refrigerate if you like). Serve with a freshly baked croissant or just enjoy it as is!
