Healthy Christmas Pudding You Must Try This Festive Season

Healthy pudding at Christmas time? Not as impossible as you’d think. Fast to prep and once cooked, these individual puddings keep for weeks. Perfect for guilt-free indulging throughout the festive holidays.

Ingredients (serves 8 people)

  1. 125g dates, chopped
  2. 100ml unsweetened orange juice
  3. 60g dried apricots, chopped
  4. 60g raisins
  5. 60g sultanas
  6. 75g brown breadcrumbs (3 regular slices with crusts removed)
  7. 75g whole-wheat flour
  8. 7ml mixed spice
  9. 1 medium-sized carrot, peeled and finely grated
  10. 1 medium-sized apple, peeled and grated
  11. 1 large egg, lightly beaten
  12. 50-100ml low-fat or fat-free milk
  13. Sugar-free custard, to serve


1. Place the dates and the orange juice in a saucepan and bring to the boil. Remove from the heat and set aside to cool.

2. Add the remaining ingredients to the date and orange mixture and mix well. Transfer the mixture to a bowl, cover and refrigerate for at least three hours, or overnight, so the flavours can develop.

3. Lightly grease 10 small pudding basins or moulds and divide the mixture into them. Cover with greaseproof paper, then pleat the paper around the sides and tie with string to secure. Share it Be the first to like Save it Print it

4. Place the puddings into pots filled with boiling water – the water should come halfway up the pudding basins. Cover each pot with a tight-fitting lid and steam for 2 to 2½ hours or until the centres of the puddings look firm. Check regularly to ensure that there is always water in the pots.

5. Once the puddings are cooked through, take them out of the pots and remove the greaseproof paper. Leave them to cool slightly before removing from the basins. Refrigerate the puddings in an airtight container for up to three weeks. Serve warm with sugar-free custard.
