Vegetable Recipe For Kids: Green Beans and Whole Grain Pasta Salad

It’s always a challenge getting kids to eat their vegetables. If you’re a busy mother, don’t give up! The trick is to prepare the greens in a way that will please their picky palates and combine them with foods they already love. This combo of green beans and whole grain pasta delivers healthy nutrients in a dish kids will gobble up!

Ingredients (serves 4 people)

  1. 225g whole wheat penne
  2. 225g green beans, quartered crosswise
  3. ¼ cup fresh flat-leaf parsley, chopped
  4. ¼ cup fresh basil leaves, chopped
  5. ¼ cup grated Parmesan cheese
  6. ¼ tablespoon olive oil
  7. ¼ tablespoon fresh lemon juice
  8. Salt and pepper


1. Cook pasta in boiling water according to the package instructions.

2. During the last 3 minutes of cooking pasta, add the green beans. When pasta is tender, drain in a colander.
