It’s Teatime! Four afternoon tea recipes

We’ve been hosting afternoon tea in Britain for nearly 200 years – pots of tea served with platefuls of small savoury and sweet treats, usually presented on charming crockery to add a touch of class to this classy afternoon break. Have a go yourself and you’ll find it doesn’t take any hard work to make it a really special occasion.

Four recipes for afternoon tea

The idea of afternoon tea is to enjoy something light just to keep you going before supper, so it’s all about quality rather than quantity. And no doorstep slices of bread, cut it neatly!

1. Cream cheese and green pepper bites

•Lightly spread a layer of cream cheese on bread.

•Cut wafer thin slices of fresh green pepper.

•Remove the crusts off the bread.

•Cut the sandwich into three long slices then cut into three the other way so you’re left with nine cute little squares.

2. Salmon and avocado fingers

•Peel and mash an avocado.

•Mix in a little freshly squeezed lemon and crushed black pepper. 

•Spread this on bread then top with slices of smoked salmon. 

•Remove crusts and cut the sandwiches into slender fingers.

3. Flavoured fairy cakes

•At a tea party there are usually lots of different cakes and pastries. If you’re short of time, make a batch of regular fairy cakes but create variety by adding different flavours to the toppings.

•Make butter icing with a little fresh lemon juice and grated zest mixed in. 

•Coffee flavoured icing is easy. Mix a teaspoon of instant coffee granules with a tablespoon of boiled water then mix this into your butter icing. Top your decorated cakes with chocolate covered coffee beans.

•Make a ganache by gently warming double cream in a saucepan and stirring in melted chocolate to make a thick delicious topping.

4. Shortbread 

•Weigh out equal amounts of softened butter and plain flour, and half this amount of caster sugar and rice flour. (Eg 300g butter and flour to 150g sugar and rice flour.)

•Blend the butter and sugar with a pinch of salt, then mix in the rest of the ingredients and work with your hands to form a dough. 

•Spread it out in a rectangle shape on a greased baking tray to a thickness of about 3cm, chill in the fridge for at least 30 minutes.

•Lightly mark out slices on the top of the mixture with a knife, scatter the top with a little more sugar.

•Bake for about 20 minutes at 180°C (gas mark 4). 

•When it’s cool cut into slices following the lines you lightly scored out.
