  • 8 plum tomatoes
  • 30ml olive oil
  • 1 onion, chopped
  • 1 clove of garlic, crushed
  • 5ml tomato paste
  • handful fresh basil, roughly chopped

To make:

Use a small knife to remove the tomato stems and cut a shallow cross at the bottom. Cover the tomatoes with boiling water. Leave for 3-5 minutes until the skin loosens. Drain the water and pull off the skins. Roughly chop the tomatoes. Set aside.

Heat the olive oil in a saucepan. Sauté the onion until soft. Add the garlic and sauté for 1 minute. Add the tomatoes and tomato paste and season with salt, freshly ground pepper and a pinch of sugar. Bring to the boil, then reduce the heat and simmer uncovered for 40 minutes.

When the sauce is thick, remove from the heat and adjust the seasoning if necessary. Add the basil and use a stick blender to blend the sauce until smooth. Pour into a sterilised bottle or jar. Seal and cool completely before sticking a label on the bottle.
