Food in a flash with your pressure cooker - Vegetable Soup

A pressure cooker helps make cooking fast and simple. Using ingredients straight from the pantry, you can serve your family enjoyable and healthy meals. Enjoy a soup that cooks in minutes. Get creative and use any combo of vegetables you or your kids prefer, whatever is in season or what you have on hand. Pasta helps thicken the soup or add a can of kidney or white beans. With very little preparation, this one pot meal is ideal for a busy weekday family dinner.


Ingredients (serves 6 people)

1. 2 tablespoons olive oil
2. 1 carrot, chopped
3. 1 onion, diced
4. 1 medium russet or white potato, peeled and diced
5. 1 stalk celery, chopped
6. 1 garlic clove, chopped
7. 2 cups tomatoes, chopped or 1 tin tomatoes, diced
8. 6 cups chicken stock or vegetable broth
9. 1 teaspoon dry mixed herbs (thyme, basil, oregano)
10. 1/2 cup dry pasta (macaroni or bow tie)
11. Salt and ground black pepper

Directions

1. In a standard pressure cooker, sauté the carrots, onions, potatoes, celery and garlic in olive oil for 2 minutes.
2. Add remaining ingredients. Seal lid and cook on high pressure for 5 minutes.
3. Turn off heat, quick release pressure. (Use your cooker’s quick-release valve or set it under cold running water.)
4. Carefully remove lid, season to taste with salt and pepper.
5. Serve with salad and crusty bread.
