Food in a flash with your pressure cooker - Chicken Stew

Pressure cookers have been used by the home cook for ages – and with good reason. They can reduce cooking time by two-thirds. This tasty chicken dish will become one of your go-to favourites. If you have extra time (who really does?), browning the chicken first will add more depth of flavor. And as your trusty pressure cooker will save at least an hour’s worth of cooking time, you may well have a few minutes to spare on the preparation. It’s worth it.


Ingredients (serves 4 people)

  1. 4 large russet or white potatoes, peeled and cut into 2-4cm chunks
  2. 1 large onion, sliced
  3. 1 large red bell pepper, cut into 2cm chunks
  4. 4 tomatoes, cut into 2-4cm chunks
  5. Chicken pieces, legs, thighs and drumsticks, cut each breast in half (about 1/5- 2kg)
  6. 1 teaspoon flour
  7. 1/4 cup white wine
  8. 3/4 cup chicken stock
  9. 2 bay leaves
  10. 1 teaspoon dry mixed herbs (thyme, basil, oregano)
  11. salt and ground black pepper

Directions

  1. Combine potatoes, onion, red pepper, tomatoes, chicken pieces, flour and a large pinch of salt in the pressure cooker. Toss to combine.
  2. Add wine, chicken stock, bay leaves and herbs.
  3. Seal lid and cook under high pressure for 8 minutes.
  4. Turn off heat, let pressure decrease naturally.
  5. Remove lid, season to taste, sprinkle with a little fresh parsley and ground pepper if desired and enjoy.
