Detox veggie recipe: Mushroom, Rice and Raisin Salad

Ingredients (serves 4 people)
- 1/2 cup raisins
- 2 cups rice, brown or white, cooked
- 225g mushrooms, thinly sliced
- 1/2 cup fresh basil leaves, chopped
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- Salt and freshly ground black pepper
Directions
In a large bowl, combine raisins, cooked rice, mushrooms, basil, olive oil, and vinegar. Season with salt and pepper to taste.
