Detox veggie recipe: Detox Tabbouleh

Most New Year’s resolutions involve sticking to a healthy diet. Why not kick start your commitment with simple detox veggie recipes like this tabbouleh? Bulgur wheat packs a nutritious punch. It’s brimming with vitamins, minerals and fiber and has a pleasing chewy texture. Parsley helps rid the system of extra fluid.


Ingredients (serves 4 people)

  1. ½ cup bulgur wheat
  2. 1 cup boiling water
  3. 2 cucumbers, peeled, seeded, chopped
  4. 2 tomatoes, cubed
  5. 1 lemon, zested and juiced
  6. ¼ cup olive oil + 2 tablespoons
  7. ½ red onion, diced
  8. ½ - 1 cup parsley, finely chopped
  9. ½ cup fresh mint, finely chopped
  10. Salt and pepper

Directions

1. In heat-safe bowl, combine bulgur and 2 tablespoons oil. Pour boiling water over and cover with plastic wrap. Let sit for 15 minutes. If too chewy, let sit for another 5 to 10 minutes. Drain off any excess water.
