Christmas All Around The World: Australia's Cranberry, Pear & Walnut Torte

Your Christmas feast will come up tops with this delicious pie from Down Under. Despite enjoying summery Christmas weather, Australia’s best-liked festive treat is a baked jewel that will make any feast sparkle.


Ingredients (serves 10 people)

  1. 300g walnuts, chopped
  2. 250ml flour
  3. 125ml breadcrumbs
  4. 5ml ground cinnamon
  5. 2,5ml ground all-spice
  6. 1,25ml ground ginger
  7. 6 large eggs
  8. 250ml sugar
  9. 125ml golden brown sugar
  10. 250ml butter, warmed
  11. 2 ripe pears, cored and sliced
  12. 125g cream cheese
  13. 15ml orange zest
  14. 20ml orange juice
  15. 100ml dried cranberries
  16. 75ml cranberry jelly

Directions

1. Preheat the oven to 190°C. Grease a 28cm cake pan. Line the bottom with baking paper and grease again.

2. Blitz the walnuts in the food processor. Add the flour and blitz until fine. Add the breadcrumbs, orange zest and spices.

3. Beat eggs in large bowl until frothy. Gradually beat in the sugar. Continue beating until mixture is thick and triples in volume. Beat in the warm butter then stir in the flour mixture.

4. Arrange the slices of pears on the bottom of the baking pan and top with cake batter. Smooth the top, then bake until golden – about 35 minutes. Cool on a wire rack.

5. For the cream cheese topping: combine the cream cheese, orange zest and the orange juice and mix well.

6. For the cranberry topping: soak the cranberries in a little water until reconstituted. Heat with the cranberry jelly and stir well.

7. To serve: remove the wax paper, spread the top of the torte with the cream cheese mixture, then top with the cranberry mix. Dust with icing sugar.
