Coffee and nut squares

By using crushed shortbread, this recipe takes easy to the next level – no messy flour measuring or dough mixing! The end result is a darkly delicious mix of flavours and textures that is sure to boost your baking credentials.

Ingredients (serves 4 people)

1. Cake
2. 225 g margarine
3. 1 tin (397 g) condensed milk
4. 2 tablespoons (30 ml) syrup
5. 2 cups (500 ml) mixed nuts of your choice, chopped
6. 2 packets (200 g each) shortbread biscuits, crushed finely
7. Icing:
8. 3 cups (750 ml) icing sugar
9. 2 tablespoons (30 ml) strong coffee
10. Water


1. Preheat the oven to 180°C and line a 20 x 20 cm pan.
2. Melt the margarine and add the condensed milk, followed by the syrup.
3. Mix well and add the nuts and crushed biscuits.
4. Mix well and pour into the pan.
5. Spread the mixture evenly in the pan and bake for 25-30 minutes until firm. Leave to cool.
6. Mix the icing sugar and coffee.
7. Add a little water at a time until the icing is spreadable.
8. Spread over the cake and let it stand for 20 minutes.
9. Cut into blocks.
