Banana and mango spring rolls with coconut ganache @ Reward Me

Christmas All Around The World: Banana and Mango Springrolls With Coconut Ganache

Originally prepared in China to celebrate New Year, these crisp and gooey rolls lend an exotic touch to the predictable Christmas spread.


Ingredients (serves 8 people)

  1. FOR THE GANACHE:
    410ml coconut milk
    80ml golden brown sugar
    7,5ml ground ginger
    240g chocolate, chopped
  2. FOR THE SPRINGROLLS:
    8 squares springroll pastry
    2 regular bananas, halved lengthwise and then crosswise
    1 medium-sized mango, cut into strips
    1 egg, beaten
    Vegetable oil for deep-frying

Directions

1. Preheat the oil to 190°C.

2. Place the coconut milk, sugar and ginger in a saucepan and bring to a boil. Add the chocolate off the heat and whisk until melted and smooth. The sauce can be made in advance.

3. Place the springroll pastry in a diamond shape in front of you. Place a piece of banana on it lengthwise followed by two pieces of mango.

4. Start to roll it up, folding in the sides when near the end, brush with the egg to seal. Do the rest the same way.

5. Fry in the preheated oil until crispy and golden in colour.

6. Serve hot with the coconut ganache.
