Christmas Foods All Around The World: Pannetone From Italy

Before indulging in the sweets, why not start off with savory treats? These simple recipes will be spine-tingling for the whole family. Make mummies out of string cheese and you’ll have everyone shrieking.

Ingredients (serves 10 people)

  1. 60ml dark rum
  2. 200ml raisins and sultana mix
  3. 200ml candied lemon and orange peel, diced
  4. 2 packets of yeast
  5. 600g flour
  6. 100ml sugar
  7. 1 jumbo egg
  8. 4 jumbo egg yolks
  9. Pinch of salt
  10. 100g butter, melted


1. Marinate the fruit with the rum. Mix the yeast with only 100ml of the flour and as much water as necessary for the dough to be elastic. Cover with a damp teatowel and put into a warm, draft-free place until double in size, about 30 minutes.

2. Add the remaining flour, sugar, eggs, salt and butter. Knead for 15 minutes then place the dough in a warm place to rise until double in size again.

3. Preheat the oven to 190°C.

4. When the dough is smooth and elastic, add the rum-marinated raisins and candied peel.

5. Place the dough in the prepared tin and leave to rise until double in size.

6. Cook the panetone for about 1 hour. The cake is ready when a skewer inserted in the centre comes out dry.

7. Tip: Make smaller pannetones in ramekins, only bake them for 20 minutes.
