Cheesy corn chowder

Chowder down! A light supper recipe all the way from Michigan, USA, is a delicious meat free meal for vegetarians and non-vegetarians alike. This rich, comforting chowder will soon become a family favourite during winter.

INGRÉDIENTS (pour 4 gourmands)

  1. Olive oil
  2. 1 onion, diced (optional)
  3. 1 can cream-style sweetcorn
  4. 250ml cream
  5. 250ml milk
  6. 50g frozen mixed vegetables, thawed (carrots, peas, green beans)
  7. 1 small can mushrooms, pieces and stems
  8. 1 carrot, peeled and chopped
  9. 2 medium potatoes, peeled and cubed
  10. 250ml shredded Cheddar cheese
  11. Parmesan, to serve
  12. Chopped parsley, to serve (optional)

1. Heat the oil and sauté the onion until soft (if using). Add the remaining ingredients except for the cheese. Cover and simmer over a low heat for about 50 minutes.

2. Add the Cheddar then simmer for a further 10 minutes. Season with salt and plenty of freshly ground black pepper. Serve sprinkled with Parmesan and parsley, if you prefer.
